The Academia de Cacao is a week-long, hands-on program focused on cocoa quality. You will learn how to assess and improve quality in cocoa from tree to bean

 

Genetics, Propagation techniques, Farm management, harvest and collection & post-harvest practices

(fermentation, drying, and warehouse).

Visiting plantation and hiking in the historic plantations of our heirloom cocoa

Full day visiting producers
and plantations

Hands-on harvesting and collection of wet-mass
Cocoa and chocolate tastings

Friday

Theory on post-harvest processing and flavor development
Hands-on quality assurance

Saturday

Optional sightseeing day – Departure
