The producers harvest, carefully separate the pods per variety, and break open the fruit. Our truck travels to the field weekly, collecting the wet mass at each farm gate directly in the wooden fermentation boxes.

Criollo comes from a Spanish word that means native, or “from here”, referring to cocoa that was growing in Central America. Forastero comes from a Spanish word that means “foreign” and the Spanish used Forastero to refer to cocoa from other places.
