ACADEMIA DE CACAO IS OPEN

The Academia de Cacao is a week-long, hands-on program focused on cocoa quality. You will learn how to assess and improve quality in cocoa from tree to bean:  Genetics, Propagation techniques, Farm management techniques, Harvest and collection & Post-harvest practices (fermentation, drying, warehouse).

Arrival in Managua

Monday  

Theory on cocoa origin, genetics and agronomy
Cocoa nursery, hands-on grafting

Tuesday 

Visit of one young farm
Hike in ancient farms to discover the heirloom cocoa in Nicaragua

Wednesday

Day in Juan Flores’ farm

Thursday

Hands-on on harvest and collection in small farms.
Cocoa and chocolate tasting

Friday

Theory on post-harvest and microbiology
Hands-on on quality checks during post-harvest processing

Saturday

Optional sightseeing day – Departure

Cost

 

The cost of the 2018 Academia de Cacao program is US$1195 and includes accommodation, transportation within Nicaragua, meals, and the course text book.
